Chocolate Drizzled Caramel Apples
Caramel apples are a great center piece to any get together. You can choose any color of the chocolate to match the theme. These apples where a huge hit at my daughters birthday party all the kids wanted one. I love sprinkling a little sea salt on the the caramel for than sweet salt taste. Be careful when you are dipping the apples into the caramel be very careful its very hot.
Ingredients Chocolate Drizzled Caramel Apples
- 6 apples
- 2 cups sugar
- 1/4 cup light corn syrup
- 1/2 cup water
- 1/2 cup heavy cream
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- pinch of salt
- Popsicle sticks or lollipop sticks
Directions for Chocolate Drizzled Caramel Apples
Mix sugar, light corn syrup and water in a small saucepan. Bring to a boil over medium-high heat, stirring just until the sugar dissolves. Cook, swirling the pan and do not stir, until the mixture is light amber and a candy thermometer registers 320 degrees, 8 to 10 minutes. Remove from the heat, slowly whisk in heavy cream, then unsalted butter, vanilla extract and salt. Return to low heat and whisk until smooth. Let cool until the caramel is thick enough to coat a spoon. Insert sticks into the stem ends of apples and dip the apples into the caramel, letting the excess drip off. Then let cool on a parchment-lined baking sheet coated with cooking spray. Melt chocolate on a double boiler. Take a spoon and dip it into the chocolate. Hold the spoon in the air and gently wave it back and forward above the apples and let the chocolate drizzle onto the apples. Let the apples dry.
