Breakfast time always seems to go smoothly for the first few weeks of school, I have pancakes and muffins that are in the freezer so we can just heat them and go. Other times I make eggs and bacon in the morning, which they love but they don’t love it when they have it everyday. Then a few weeks into school I hear “Mom I am tired of ____” and so I try to change things up and make it a breakfast that is filling and not always the same, but it needs to be something easy and quick for mornings because our household is not a group of morning people at all and so we are all quite sluggish.
I was recently asked to partner with Minute® Ready to Serve Rice to come up with an idea that would help others like myself getting ready for school mornings. After thinking a bit on how I could make it a breakfast meal, I came up with the super easy Cinnamon Apple Raisin Multi-Grain Rice, that uses the Brown & Wild Rice and Multi-Grain Medley Minute® Ready to Serve Rice.
The Minute® Multi-Grain Medley is a blend of six popular 100% whole grains including brown rice, quinoa, barley, oats, wheat and rye, so it has all the ingredients for a filling breakfast, and I just needed to add some flare to make it breakfast worthy!
This also makes a great addition to the lunch box, just make it and put it in a thermos so it is still warm when your kids are eating lunch. Plus for the kiddos who are in college, these are easy things for them to have on hand, you can easily substitute the 1/2 cup applesauce with one of the individual serving size ones and since all they need is a microwave to cook it, cooking it in a dorm is a cinch!
Cinnamon Apple Raisin Multi-Grain Rice
Ingredients for Cinnamon Apple Raisin Multi-Grain Rice:
- 1 container of Brown & Wild Rice and Multi-Grain Medley Minute® Ready to Serve Rice
- 1/2 cup applesauce – you can use chunky or smooth whichever one your household prefers
- 1/2 tablespoon cinnamon
- 1 teaspoon sugar
- 1/4 cup rasins
Directions for Cinnamon Apple Raisin Multi-Grain Rice:
- Heat your rice according to the package, which is 60 seconds.
- While heating the rice in a small bowl mix the applesauce, cinnamon, sugar and raisins.
- When Brown & Wild Rice and Multi-Grain Medley Minute® Ready to Serve Rice is done heat the applesauce mixture for about 30 seconds in the microwave.
- Mix both together well, and serve.
One cup makes enough for 2 of my kids, so I make both cups that come in the package and then I have breakfast with them too!
