Pumpkin shaped Pumpkin Cake Recipe
These pumpkin cakes are a great center piece for any holiday party or just for a fun dessert. To great the look of pumpkins you will need a mini bunt pan or a mini pumpkin cake pan. If you feel the glaze is to thin you can add more confectioners sugar and if the glaze is to thick you can add more milk. For the steam of the pumpkin you can play around with different candy or with fondant, I love the look with pretzel rods.
Pumpkin Cake Recipe Ingredients
Pumpkin Cake recipe
- 2 cups sugar
- 1 cup canola oil
- 4 eggs
- 16 oz. canned pumpkin (not pie filling)
- 3/4 cup water
- 3 cup flour
- 2 tsp baking soda
- 1/2 tsp table salt
- 2 tsp cinnamon
- 1 1/2 tsp pumpkin pie spice
- 1 1/4 cup confectioners sugar
- 3 tbs milk
- 1 tsp vanilla extract
- orange food dye
- Pretzel Rods
Pumpkin Cake Recipe Directions
Preheat oven to 350ºF. Grease mini bunt pans. Using a mixer beat sugar and oil together until blended. Add eggs one at a time mixing after each addition. Add pumpkin purée and water and mix until blended. Whisk together the flour, baking soda, salt, cinnamon, pumpkin spice. Add to the mixer and mix only until just incorporated. Pour batter into prepared pans. Bake for about half an hour but start checking for doneness after 20 minutes the loaves are done when center springs back when touched.
In a bowl mix together the sugar, milk and vanilla together. Slowly add the orange food dye a few drop at a time till you get the orange color you are looking for.
Cut the top off the cakes so they will lay flat on top of each other. Pour a little of the glaze on top of the side than sandwich another cake on top. Place the cakes onto a cooling rack with a pan underneath to catch the drips. Spoon the glaze on the top of the cakes. Break the pretzel rods in half and stick them in the middle of the cakes.
