April Fools Day Meatloaf Cupcakes

These are SUPER easy and my kids love when I make them! They are also great for April Fool’s day!

Meatloaf Cupcakes Recipe

Directions for Meatloaf cupcakes:

Get a cupcake pan and put the paper cupcake holder in
Make Meatloaf mix (recipe below)
Fill cupcake holders with meatloaf mix and flatten the top so it is smooth
Bake until cooked
Make Mashed potatoes recipe found here and add green or any other color food dye, spoon on top of meatloaf
Add 1 Cherry tomato to the top

Meat Loaf Recipe

Ingredients for meatloaf:

1 pound ground beef
1 tablespoon garlic
1 tablespoon oregano
1/2 cup ketchup
1 egg
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup breadcrumbs
1 onion chopped
1/2 green bell pepper chopped

Directions for meatloaf:

Throw all ingredients into a bowl and mix well
Bake for 45 mins at 350 (may be less when making them in cupcake holders)

Mashed Potatoes Recipe

Ingredients:

1 5 pound bag of potatoes (regular or yukon gold work great)
2 containers of sour cream
1/2 stick butter
1 onion diced

Directions:

Boil potatoes until they are soft (I stick a knife in them to see if they are done)
Mash with a potato masher
Add Sour cream, onion and butter
Mix until well blended and smooth
