Here is a super simple and easy recipe for Strawberry Banana Smoothie Cupcakes with Cream Cheese frosting and they are AMAZING! My kids told me they wanted fruity cupcakes so I went looking to see what we had on hand and this is what I came up with and they tasted great!
Ingredients:
- 1 box white cake mix
- 2 bananas
- 8 ounces of frozen strawberries
- 1/2 cup water
- 2 eggs
- 1 jar of cream cheese frosting
Directions:
- In a food processor or blender put the strawberries and bananas and mix them till they are a smoothie like consistancy and blended together.
- In a large mixing bowl mix eggs, water and strawberry banana mixture
- add cake mix to mixing bowl and stir till mixed completely
- Put cupcake liners into cupcake pan and then fill them 2/3 the way with cupcake batter
- Bake at for 20-30 minutes (watch for them to be golden on top and check them with a knife to make sure they are cooked all the way)
- Let cool for 10 – 15 minutes and then top with cream cheese icing
