Sneaky Veggie Latkes
I used to make my now 18 month old daughter all of these great meals just for her. Than I got in the mind frame she was old enough just to eat everything we ate…. I was wrong to think this. The first problem is she has decide she is a vegetarian! The second problem is she is now the worst vegetarian because she now doesn’t want to eat any vegetables! yah I know got to love picky eaters. Her meals mainly stands of fruit, yogurt, cheese and carbs. Well I figure I need to start by sneaking some vegetables in those carbs she loves. I figured this was going to be a recipe that was manly going to be for her but I LOVED it! The carrots gave this slight sweet taste to the potato’s that was amazing!
Sneaky Veggie Latkes Ingredients
- 2 large carrots, peeled
- 1 large parsnip, peeled
- 1 large potato
- 2 tablespoons flour
- 1 large egg
- 1/2 teaspoon salt
- olive oil
Sneaky Veggie Latkes Directions
Shred the carrots, parsnip and potato into a bowl. Mix in the flour, eggs and salt. In a sauté pan over medium heat, add a thin coating of the oil. Scoop out about two tablespoons of the mixture and place it into the oil and press down to form a flat circle. Cook for 2 to 3 minutes on each side, until golden brown. Place on to a paper towel lined plate to remove extra oil. Serve with sour cream or apple sauce.
