I’m still trying to keep up my healthy eating, but I am still having trouble eating well at lunch time. Making lunch for my whole family is a time consuming task and everyone always wants something different. By the time I make myself something, I usually want to just slap a sandwich together and be done with it. I just tried this recipe from Good Housekeeping. I had to make just a couple adjustments, but it was very good and quick to make; and its a lot healthier then baloney and cheese!
1/2 cup chickpeas
5 grape tomatoes, chopped
1/4 cucumber, peeled and chopped
1 tsp fresh dill chopped
3 Tbsp. reduced fat Feta cheese
2 Tbsp nonfat greek yogurt
2 Tbsp low fat sour cream
kosher salt and pepper to taste
Whole wheat pita pocket bread
All you have to do is mix everything together in a bowl and spoon it into the pita! Its a little bit of chopping, but its just as fast to make as any sandwich. I added the salt and pepper and the sour cream to more closely resemble my tzatziki sauce recipe (a cucumber and dill sauce used in Mediterranean cuisine) and upped the feta cheese, because its tasty! Hope everyone enjoys it as much as I did!

- Whole wheat Pita Pocket Bread
- Chop ingredients as needed
- Mix all ingredients in a bowl
- Spoon into Pita and Enjoy!!
