Chocolate Chip Zucchini Bread

Chocolate Chip Zucchini Bread is a delicious quick bread that’s perfect for a healthy breakfast or a snack.

Like traditional zucchini bread this bread is so moist and delicious, you won’t even know there are vegetables in it.

Tips for making Quick Bread

1 - Bake long enough. 2- Line the Baking Pan. 3- Mix the Ingredients in Order. 4- Do not over mix the bread batter.

INGREDIENTS Eggs Sugar Brown Sugar Olive Oil Zucchini Vanilla extract Flour Salt Baking soda Cinnamon Baking powder Walnuts Chocolate chips

Using a cheese grater, grate the zucchini. Preheat oven to 350° F. In a large bowl, mix together the eggs, oil, granulated sugar, light brown sugar, and vanilla extract.

Step 1

Once combined, add the dry ingredients (flour, salt, baking soda, baking powder, and cinnamon) to the wet ingredients and mix well.

Step 2

Add the grated fresh zucchini and give it a little mix. Next add in walnuts & chocolate chips, saving some for the top of the bread before baking, and give it a good mix.

Step 3

Spray a loaf pan with nonstick cooking spray & fill 3/4 full, top with the remaining chocolate chips and walnuts.

Step 4

Bake for 50-55 minutes or until the toothpick comes out clean. let the entire loaf cool in the pan for 3-5 minutes, then transfer to a wire rack for an additional 10-15 minutes.

Step 5

This bread is best if it is stored in an airtight container with waxed paper between the slices.
