Homemade blueberry syrup. Just 3 ingredients will give you a homemade blueberry syrup that is perfect for pouring on top of pancakes and waffles, plus adding to yogurt or fancying up vanilla ice cream.
Mashup your blueberries, you can use either a food processor, potato masher, or a blender. If you want the syrup to have some chunks of blueberries then i suggest mashing only part of the blueberries and then adding the unsmashed ones into the pot with the smashed ones. If you want quick and easy and lots of chunks of blueberries you can skip the mashing step completely.
In a medium sized pot add the blueberries, water and sugar.
Over medium heat, bring everything to a boil.
Let boil for 5-8 minutes randomly stirring. You will know the syrup is done cooking when it coats the back of a spoon dipped in and removed. If you find that your syrup got thicker then you would like just add a small amount of water and mix well to thin it out.
