Ingredients

  • 6 vine-ripened tomatoes
  • 1/2 cup red onion
  • 1 jalapeno pepper cut into large chunks
  • 1/2 cup cilantro
  • 6 garlic cloves
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup fresh lime juice

Instructions

  • Wash all of the fresh produce.
  • Cut the tomatoes in half and squeeze out the seeds.
  • Cut the onion in half
  • Place the onion and garlic into the food processer, pulse just until its very roughly chopped.
  • Add the tomatoes,  jalapeno, and cilantro in a food processor. Pulse up the mixture until it's roughly chopped.
  • Dump the mixture into a bowl and stir in the salt, pepper and lime juice. Stir well and taste. Add more salt and lime as needed.
