Large pie crustI use 2 store bought Graham Cracker crusts, simply because I prefer the taste, and make two smaller pies, but if anyone is interested, I can also post a generic pie crust recipe!
To prepare the potatoes, just boil them until they are softened all the way through. The skin should come right off at that point and then just mash them until smooth.
Beat or stir pie ingredients together and pour into the pie crust.
Bake at 350 for 50-55 minutes
Beat the egg whites until they peak while melting the mini marshmallows in a skillet with the milk
Beat the sugar, vanilla and salt into the egg whites, then fold the egg white mixture into the melted marshmallows.
Put the topping onto the baked pie and put back into the oven for about 10 minutes or until the meringue is lightly browned.
