{Recipe} Sweet Potato Pie with Marshmallow Meringue Topping

  • To prepare the potatoes, just boil them until they are softened all the way through. The skin should come right off at that point and then just mash them until smooth.
  • Beat or stir pie ingredients together and pour into the pie crust.
  • Bake at 350 for 50-55 minutes
  • Beat the egg whites until they peak while melting the mini marshmallows in a skillet with the milk
  • Beat the sugar, vanilla and salt into the egg whites, then fold the egg white mixture into the melted marshmallows.
  • Put the topping onto the baked pie and put back into the oven for about 10 minutes or until the meringue is lightly browned.
