Balsamic Roasted Red Pepper Pasta Salad
Balsamic Roasted Red Pepper Pasta Salad is an easy cold pasta salad recipe that is perfect for summer! A delicious pasta salad filled with roasted red peppers, chickpeas, fresh mozzarella cheese and olives tossed in the perfect balsamic dressing!
Servings 8 servings
Cook pasta according to box once cooked drain and rinse with cold water until cold.
Pour pasta in a large bow.
Slice your red peppers, olives and add into pasta.
Drain the can of chickpeas and add them into the bowl.
Cut the mozzarella cheese into small pieces and add to the bowl
Add olive oil and balsamic vinegar into the bowl and stir well.
Serve immediately or store in an airtight container in the fridge.
