Ingredients

Easter Bunny Cake Ingredients

  • 1 10 inch cake
  • 1 batch frosting
  • 1 1/2 cups coconut
  • 1 Large marshmallow
  • Solid colored ball sprinkles
  • 3/4 cup of green dyed coconut

Marshmallow Buttercream Frosting Ingredients

  • 1 cup butter softened
  • 4 cups confectionary sugar
  • 1/2 teaspoon almond extract
  • 13 ounces marshmallow fluff

Instructions

Easter Bunny Cake Directions

  • Preheat the oven to 300 degrees and grease your cake pans.
  • In a large bowl, whisk together the dry ingredients.
  • In your stand mixer bowl add the wet ingredients.
  • Add half of the dry ingredients into the wet ingredients and mix together.
  • Then add the rest of the dry ingredients to the wet ingredients and mix completely.
  • Mix everything on medium speed for 2 minutes.
  • Pour the cake batter in to a 10 inch round cake pan.
  • Bake at 300 degrees for about 25 minutes then turn the oven up to 325 for an additional 25 minutes.

How to Make Marshmallow Buttercream Frosting

  • Place the butter in the bowl of the stand mixer. Cream the butter until smooth.
  • Slowly add in your sugar 1/2 cup at a time until its all incorporated.
  • Add in the almond extract and continue mixing for 5-10 minutes letting the butter fluff completely with the sugar.
  • Carefully fold the marshmallow fluff into the butter mixture until well incorporated.

How to Assemble Easter Bunny Cake

  • Once the cake is fully cooled,
  • Cut the top of the cake so it is level.
  • Cut the cake in half widthwise.
  • Top of half of the cake with a layer of buttercream.
  • Place the other half of the cake on the top of the other cake.
  • Stand the cake up on its side so the cut side is now the bottom.
  • Cover the whole cake with a layer of buttercream and smooth it out so the edges are rounded.
  • Press the coconut into the buttercream of the cake to create the bunnies fur.
  • Cut a marshmallow in half and dip the sticky side of the marshmallow into the sugar.
  • Press the marshmallows into the top front of the cake for its ears.
