Preheat the oven to 350 degrees for the biscuits
Brown the sausage; reserve 1 Tbsp of fat and strain the rest; set aside.
Put the biscuits in the oven. Cook according to package.
Melt butter in a large pan over med-high heat with the reserved sausage grease.
Add the flour and stir with a whisk; this mixture should be fairly solid. Cook for a minute to brown the mixture.
Lower to Med heat and add milk small amounts at a time, being sure to whisk until smooth after each addition; add the colder than pan temperature milk to quickly and you will get lumps. The same will happen if the mixture is not whisked until smooth.
Once all the milk is added and it is completely whisked, add salt and pepper to taste (I use approx. 1 tsp of each, possibly a bit more)
Heat until boiling, stirring occasionally. Add the sausage and lower the temp to low, still stirring. Allow to thicken.
Serve immediately over biscuits.
