Ingredients

  • 1 small head cauliflower cut into florets
  • 2 tablespoons Olive oil
  • 1 tablespoon Olive Oil
  • 1 onion diced
  • 2 cloves garlic chopped
  • 3 cups   chicken stock
  • 1 1/2 cups aged white cheddar shredded
  • 1 cup milk
  • salt and pepper to taste
  • scallions

Instructions

  • Preheated the oven to  400F. Mix the cauliflower, salt and pepper in the oil, arrange them in a single layer on a large baking sheet and roast in the oven until lightly golden brown, about 20-30 minutes.
  • Heat the oil in a large sauce pan over medium heat, add the onion and sauté until tender, about 5-7 minutes. Heat the oil in a large pan over medium heat, add the onion and sauté until tender, about 5-7 minutes.
  • Add the garlic and thyme and sauté until fragrant, about a minute.
  • Add the broth, cauliflower, and onion mixture to your slow cooker.
  • Cook on low for 6-10 hours or high for 2-4 hours. Blend your soup with your blender till smooth.
  • Mix in the milk and cheese, heat just until heated.
  • Season with salt and pepper and remove from heat. Garnish with scallions.
