Ingredients

  • 2 large eggplants sliced into 1/2 thick pieces
  • 1 green pepper
  • 1 Jar your favorite pasta sauce
  • Salt and pepper to taste
  • 1 1/2 C Italian breadcrumbs
  • 1 1/2 C Parmesan cheese
  • 3/4 C flour
  • 4 eggs beaten
  • 1/4 C olive oil
  • 1 large bag shredded mozzarella cheese
  • Pam spray

Instructions

  • Get a glass baking pan
  • Spray your pan with pam.
  • In glass pan, layer sauce, eggplant and mozzarella cheese and then bake at 350 for 25 minutes.
