  • Wash the potatoes and cube. If you want to peel the potatoes you can but it is not a must. 
  • Fill a pot with cold water and add the potatoes to the water. 
  • Over high heat bring the potatoes to a boil and boil potatoes in a pot until they are soft enough that you can stab them with a knife easily about 15 minutes), then drain.
  • While potatoes are cooling cook bacon on the stove until crispy then drain on a paper towel and once cooled crumble into little pieces and set aside.
  • Dice the large red onion and shred the cheese if needed and set aside.
  • In large bowl mix potatoes, bacon, cheese, onion and ranch dressing. Mix everything well and be sure everything is coated well with the ranch dressing.
  • Put the potato salad in the fridge for about 30 minutes to cool the rest of the way.
