Pumpkin Chocolate Chip Cookies

Ingredients

  • 1 small can of pumpkin 16 oz
  • 1/2 cup shortening
  • 1/2 cup butter (You can use the new Cinnamon Butter for this and it works great adding a bit more
  • cinnamon flavor)
  • 2 cups Sugar you can cut it down to 1 cup and they still come out great
  • 2 t.Vanilla
  • 2 t.baking powder
  • 2 t baking soda
  • 2 t cinnamon I use a tad bit more
  • 4 cups of flour
  • 1 16 oz package of Semi-Sweet Morsels I had the mini ice cream topper ones in the pantry so that is what we used when we made them this time:

Instructions

  • Preheat oven to 350 degrees
  • Mix all of the ingredients but the flour and chocolate chips in your mixer (you can use a bowl and spoon but it is easier in a mixer) and mix well.
  • When it is mixed well add in the 4 cups of flour 1 cup at a time and slowly since the mixer will be on and you do not want to get flour everywhere.
  • When that is well mixed add in your chocolate chips and stir again
  • Plop cookie dough on baking sheet. Bake for 10-12 minutes DO NOT OVER BAKE, after 10 minutes watch them to make sure they do not burn :)
