Sun dried Tomato Tuscan chicken recipe! This one pan chicken recipe is easy to make and done in about 30 minutes, making it the perfect weeknight dinner meal!
Preheat oven to 350°F.
Place the oil in a oven safe pan like a cast iron pan. Heat the oil over medium heat. Season both sides of the chicken breast with the salt and pepper and place them in the pan. Cook the chicken until it is golden brown on both sides.
Add the garlic, thyme and sun-dried tomatoes to the pan sauté them until the garlic has turn light brown.
Pour in the heavy cream and chicken stock to the pan. Place the pan into the oven until the chicken reaches an internal temperature of 160°F.
Remove the chicken from the oven and stir the Parmesan cheese into the sun-dried tomato mixture. Top this with the basil and enjoy.
