Homemade cupcakes stuffed with marshmallows, topped with marshmallow frosting and lucky charms cereal make these lucky charms cupcakes the perfect St. Patrick's Day Cupcake.
Combine the butter and marshmallow cream in a bowl and use your stand mixer or use a hand mixer and mix until blended well.
Then slowly add the powdered sugar and mix well, then gradually add the milk until the icing is a thin consistency. For these a little bit runnier then normal gives them more of stylish look to go along with the marshmallow icing theme.
Assembling Cupcakes
Using a knife cut a small square in the center of each cupcake and fill with lucky charms marshmallows. Then cut off inner part of removed "plug" and replace in cupcake.
Frost the cupcakes with the frosting, and then top with Lucky Charms cereal pieces and Green Decorating sprinkles.
