Pastel Deviled Eggs

Ingredients

  • 12 eggs hard cooked and peeled
  • 1/2 white vinegar per color you would like
  • liquid food coloring
  • 1/2 cup mayonnaise
  • 2 teaspoon yellow mustard
  • 1 1/4 teaspoon white wine vinegar
  • pinch of salt

Instructions

  • Place the eggs in a large saucepan and add water to cover by an inch.
  • Bring the water to a boil, cover it with a lid, and remove it from heat. Let sit for 10 minutes then drain the water.
  • After draining the water, transfer the eggs to a bowl of ice water and let cool completely. You can place them in a bowl of cold water to make them cool faster.
  • Peel the shell of hard boiled eggs and discard. Or you can use them to make Eggshell Geodes as a fun activity with the kids.
  • Cut the hardboiled eggs in half lengthwise. Place the yolks in a large bowl.
  • Pour your vinegar into your cups, and add enough food coloring drops to give a pastel color.
  • Line a plate with paper towels. Dip one-half of the egg white at a time into your choice of color. Only let it sit for a few seconds because the eggs take color quickly. Place eggs onto the paper towels to drain while you finish the rest of the eggs.
  • Using a fork mash yolks, then mix in the mayonnaise, mustard, white wine vinegar, and salt and mix well until everything is combined.
  • Place a star piping tip into a piping bag, pastry bag or ziptop bag.
  • Transfer mixture to the bag.
  • Arrange your colored egg whites on your plate. Pipe the yolk mixture into the hole of the egg on the egg halves.
  • Refrigerator until you are ready to serve.
