Ingredients

  • 2 pounds chicken wings
  • Salt to cover and dry chicken wings
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 1/2 teaspoons poultry seasoning

Instructions

  • Prepare your wings by separating the drumettes and flats; this can be done by bending the joint open and sliding a knife between the drumette and flat and cutting through the joint. Remove and discard the tip or use for stock.
  • Pat dry.
  • Lay in pan sheet and sprinkle salt across chicken, turn and repeat.
  • Set pan in fridge for at least 1 hour or up to 4 hours. Do not cover. This will allow the salt to penetrate and the chicken to dry which is necessary to have crispy wings.
  • In a small bowl, combine the pepper, garlic powder, smoked paprika and poultry seasoning, and mix.
  • Add chicken to a large bowl, drizzle with the oil and stir to coat. Add the seasoning mix till all pieces are evenly coated.
  • Preheat Air Fryer to 400 degrees,  once Air Fryer is pre-heated, line with parchment paper, then add chicken. Do not crowd. Drumettes can be stood upright along the edge to save space.
  • Cook for approximately 20 minutes, flipping hallway through. Chicken wings will be cooked when internal temperature reaches 165 degrees.
  • Remove chicken wings and place on platter. Serve immediately with blue cheese dressing and buffalo sauce or your favorite dipping sauce.
