Cheesy Beef Enchiladas Recipe

If you love beef enchiladas, you're going to want to try this cheesy beef enchilada recipe. It's packed with flavor, and the cheese adds a delicious creamy element that takes these enchiladas over the top. The best part is, that they're easy to make and can be on the table in just 30 minutes.

Ingredients

  • 12 Tortillas Flour
  • 1 1/2 pounds ground beef
  • enchilada sauce
  • 2 cloves garlic
  • 1 onion diced
  • 1 15 ounces black beans
  • 1/2 teaspoon cumin
  • Salt to taste
  • pepper to taste
  • 3 cups cheese Shredded, I like the Mexican mix
  • 4 ounces green chilies chopped ( mild or hot as per preference) drained
  • 2 Tablespoons fresh Cilantro chopped

Instructions

  • Preheat the oven to 375 degrees Fahrenheit.
  • Prepare a 9 x 13 baking dish with cooking spray and set aside.
  • In a large frying pan, sauté the onions and garlic at medium heat, add the ground beef, and brown till cooked through, add black beans, cumin, paprika, taco seasoning, salt & pepper, and 1/2 cup of enchilada sauce. Mix well and heat through.
  • Add 1/2 cup enchilada sauce to the bottom of the baking dish. Place a tortilla on a cutting board,  add 1/4 cup meat mixture, 2 tablespoons enchilada sauce, sprinkle with cheese, and roll, placing with the seam down, repeat with remaining tortillas.
  • Cover tortillas with remaining sauce, sprinkle with green chilis and remaining cheese
  • Bake for 25-30 minutes, let rest for 5 minutes and serve with your favorite toppings.
