If you love beef enchiladas, you're going to want to try this cheesy beef enchilada recipe. It's packed with flavor, and the cheese adds a delicious creamy element that takes these enchiladas over the top. The best part is, that they're easy to make and can be on the table in just 30 minutes.
4ounces green chilieschopped ( mild or hot as per preference) drained
2Tablespoonsfresh Cilantrochopped
Instructions
Preheat the oven to 375 degrees Fahrenheit.
Prepare a 9 x 13 baking dish with cooking spray and set aside.
In a large frying pan, sauté the onions and garlic at medium heat, add the ground beef, and brown till cooked through, add black beans, cumin, paprika, taco seasoning, salt & pepper, and 1/2 cup of enchilada sauce. Mix well and heat through.
Add 1/2 cup enchilada sauce to the bottom of the baking dish. Place a tortilla on a cutting board, add 1/4 cup meat mixture, 2 tablespoons enchilada sauce, sprinkle with cheese, and roll, placing with the seam down, repeat with remaining tortillas.
Cover tortillas with remaining sauce, sprinkle with green chilis and remaining cheese
Bake for 25-30 minutes, let rest for 5 minutes and serve with your favorite toppings.
