Ground Beef Meatloaf Cupcakes for April Fools Day

Nothing says April Fools' Day like a delicious and humorous prank. These ground beef cupcakes with mashed potatoes are the perfect way to have a fun dinner with the kids for April Fool's day. These mini meatloaves are shaped into cupcake shapes and then topped with a creamy mashed potato topping that is simple to make.

Ingredients

Ground Beef Meatloaf Cupcakes Ingredients

  • 1 pound ground beef
  • 1 tablespoon garlic
  • 1 tablespoon oregano
  • 1/2 cup ketchup
  • 1 egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup breadcrumbs
  • 1 small onion chopped
  • 1 cup green bell pepper chopped

Mashed Potatoes Ingredients

  • 2.5 pounds yukon gold potatoes
  • 16 ounces sour cream
  • 1/4 cup butter
  • 1/2 cup white onion chopped
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 12 Cherry tomatos for each cupcake

Instructions

Make the meatloaf

  • Chop the onion into small pieces and set aside. Wash the bell pepper and chop it into small pieces.
  • In a large mixing bowl add the ground beef, garlic, oregano, ketchup, egg, salt, pepper, chopped onion, choped bell pepper and bread crumbs together to form the meatloaf mixture.
  • Line a 12 count muffin tin with cupcake liners and add the meatloaf mixture to the cupcake liners.
  • Bake for 45 mins at 350.

Assemble the April Fools Meatloaf cupcakes:

  • Get a cupcake pan and put the paper cupcake holder in make Meatloaf mix
  • Fill cupcake holders with meatloaf mix and flatten the top so it is smooth
  • Bake until cooked

Mashed Potaotes

  • Boil the potatoes in a large stock pot until they are soft. While the potatoes are boiling dice your onion and cut the butter into small chunks and set aside.
  • Return the potatoes to the stock pot and mash with a potato masher. Mash until as smooth as you can get them.
  • Add in the sour cream and butter and mix until the potatoes are smooth and creamy.
  • Add in the onions, salt and pepper and mix well.
  • Add in the food coloring - as many drops to get the desired color you want and mix well.
  • Spoon or pipe the mashed potatoes on top of the cooked meatloaf cupcakes.
  • Add 1 Cherry tomato to the top of each cupcake.
