Cook the Eggs so they are hardboiled and allow them to cool.
Peel the shell of hard-boiled eggs and discard.
Cut the hardboiled eggs in half lengthwise. Place the egg yolks in a large bowl and set aside.
Pour the water into 2 cups, and add 10-15 drops of green food coloring to one bowl and add 10-15 drops of red food coloring to the other. If you want a deep color you can add 1 teaspoon of white vinegar to the water.
Line a plate with paper towels.
Place the egg whites into the colored water and set aside, let sit until they are the color you want them to be.
Remove the eggs from the coloring and place eggs onto the paper towels to drain.
In a mixing bowl add the egg yolks and mash with a fork.
Add in the mayo, mustard, salt, and pepper and mix well until everything is combined and you have a smooth mixture.
Place a star piping tip into a piping bag, pastry bag or ziptop bag.
Transfer the mixture to the bag.
Arrange your colored egg whites on your plate. Pipe the yolk mixture into the hole of the egg on the egg halves.
Refrigerator until you are ready to serve.
