Zucchini Pizza Bites

This Zucchini Pizza Bites recipe is simple to make and a healthy pizza recipe. This recipe is both Keto Friendly and Weight Watchers Friendly along with being super kid friendly too!

  • 1/2 cup  Homemade Pasta Sauce or your favorite jar variety If Keto go with a low carb pasta sauce
  • 1/2 cup Mozzarella Cheese Full fat for Keto, Low fat for Weight Watchers
  • 2 teaspoons olive oil
  • 2 zucchini
  • Salt to taste
  • pepper to taste


  • Wash your Zucchini and then cut into 1/4 inch slices (if they are not perfect don't worry they just need to be thin enough to cook quickly and thick enough that you can hold them without them flopping.
  • Once sliced, add to a large bowl, drizzle a little olive oil (just enough to help coat them) and sprinkle a small amount of salt and pepper on them. Mix well so they are all coated.
  • Get a baking sheet and line with a silicone baking mat or aluminum foil, place your slices on the tray.
  • Bake at 350 for 3-4 minutes, then remove the tray and flip them over.
  • Put back in the oven for another 2 minutes.
  • Remove again and put a small amount of pasta sauce on top, sprinkle mozzarella cheese on them and put back in the oven for 3-4 minutes until the cheese is melted.


Makes 4 Servings 1 SmartPoint per recipe on Weight Watchers FreeStyle. Use full fat mozzarella cheese for keto friendly pizza bites and low fat cheese for weight watchers friendly pizza bites. If you are Keto then you will also want to use a low carb pizza sauce as well.
