Avocado BLT Salad

This fresh made Avocado BLT Salad is easy to make and the perfect summer salad recipe. The traditional bacon lettuce and tomato sandwich with a twist and turned into one amazing fresh salad! Fresh romaine lettuce, cooked bacon, feta crumbles, tomato and avocado combine for the perfect salad.

Ingredients

  • 3 cups romaine lettuce
  • 1 avocado diced
  • 1/2 pint cherry tomatoes
  • 3/4 cup cucumber sliced
  • 4 slices bacon crumbled
  • 1/2 cup feta cheese crumbled

Instructions

  • Cook the bacon with your preferred method. Personally I like to either cook it on the stove or bake bacon in the oven. If you are baking bacon in the oven, line a baking sheet with tin foil. Place the bacon in a single layer on the tin foil. Bake at 400° for 12-17 minutes depending on how crispy you like your bacon.
  • While the bacon is cooking wash the romaine lettuce, cucumber and tomatoes.
  • After washing the romaine lettuce, cucumber and tomatoes chop the romaine lettuce up and place into 2 bowls.
  • Then cut the cherry tomatoes in half and place on top of the chopped lettuce.
  • Next Peel and slice the cucumber and place on top of the lettuce.
  • Peel and slice the avocado and place half the avocado on top of each bowl of salad.
  • Sprinkle 1/4 cup of feta cheese on top of each salad.
  • Remove the bacon from the oven and crumble, sprinkle 2 pieces of bacon crumbles worth on top of each salad.
  • Drizzle your preferred salad dressing on top of each salad.
