Creamy Avocado Pasta

Creamy Avocado pasta is the easiest, creamiest pasta you will ever eat! Creamy avocado pasta sauce with roasted tomatoes and pasta makes this easy recipe complete. This easy pasta dish is perfect for dinner and takes little effort to make. Serve with fresh bread and a salad for a complete dinner.

Ingredients

  • 4 vine ripe tomatoes
  • 4 tablespoons olive oil
  • 1 pound fettuccine noodles uncooked
  • 2 ripe avocados seed and skin removed seed and skin removed
  • 2 garlic cloves peeled
  • 1/2 teaspoon salt
  • 2 tablespoon lemon juice
  • grated fresh Parmesan cheese to taste
  • salt to taste
  • pepper to taste

Instructions

  • Preheat the oven to 350 degrees. Slice your tomatoes in half and toss them with 2 tablespoons olive oil. Place them on a parchment lined sheet pan and bake for 30 minutes.
  • While the tomatoes are cooking, put a pot of water on the stove and bring to a boil.
  • Once you put the pasta in the boiling water and cook to Al Dante.
  • While the pasta is cooking, place 2 table spoons olive oil, avocado, garlic, salt and lemon juice to a food processor.
  • Pulse until the ingredients are smooth and creamy.
  • Drain the pasta when it is done cooking and pour the pasta back into the pot.
  • Remove the tomatoes from the oven and add to the pasta, then pour in the avocado sauce and mix well to combine all the ingredients and the pasta is covered in the sauce.
  • Top with parmesan cheese, salt and pepper to taste and enjoy.
