Creamy Avocado Pasta
Servings 4 servings
- 3-4 vine ripe tomatoes
- 4 tbsp olive oil
- 1 box of fettuccine noodles
- 2 ripe avocados seed and skin removed
- 2 garlic cloves peeled
- 1/2 tsp salt
- 2 tbsp lemon juice
- grated fresh Parmesan cheese
- salt and pepper to taste
Preheat the oven to 350 degrees. Slice your tomatoes in half and toss them with the olive oil. Place them on a parchment lined sheet pan and bake for 30 minutes.
While the tomatoes are cooking, place the olive oil, avocado, garlic, salt and lemon juice to a food processor.
Pulse until the ingredients are smooth and creamy.Combine the warm pasta with the sauce and tomatoes in a large bowl, until all the pasta have been covered.
Top with parmesan cheese and enjoy.
