Ingredients

  • 3-4 vine ripe tomatoes
  • 4 tbsp olive oil
  • 1 box of fettuccine noodles
  • 2 ripe avocados seed and skin removed
  • 2 garlic cloves peeled
  • 1/2 tsp salt
  • 2 tbsp lemon juice
  • grated fresh Parmesan cheese
  • salt and pepper to taste

Instructions

  • Preheat the oven to 350 degrees. Slice your tomatoes in half and toss them with the olive oil. Place them on a parchment lined sheet pan and bake for 30 minutes.
  • While the tomatoes are cooking, place the olive oil, avocado, garlic, salt and lemon juice to a food processor. 
  • Pulse until the ingredients are smooth and creamy.Combine the warm pasta with the sauce and tomatoes in a large bowl, until all the pasta have been covered.
  • Top with parmesan cheese and enjoy.
