What to Serve with Avocado Pasta
Normally when we make avocado pasta, we serve it with a bread and salad. What type of bread and salad we serve depends on what we are in the mood for and what we have on hand.

Tips for making this recipe
Use ripe avocados. When you are buying avocados you can remove the steam and if they inside is green it is ripe to use.
Use any type of pasta. I like using fettuccine but you can use any pasta, rigatoni, spaghetti, macaroni ect.
Change up the tomatoes. If you do not have vine ripe tomatoes on hand you can use other types of tomatoes including cherry tomatoes, roma ect.
Avocado Pasta Ingredients
- 3-4 vine ripe tomatoes
- 4 tablespoons olive oil
- 1 box of fettuccine noodles
- 2 ripe avocados seed and skin removed
- 2 garlic cloves peeled
- 1/2 teaspoon salt
- 2 tablespoon lemon juice
- grated fresh Parmesan cheese
- salt to taste
- pepper to taste
How to make Avocado Pasta Sauce
Preheat the oven to 350 degrees. Slice your tomatoes in half and toss them with 2 tablespoons olive oil. Place them on a parchment lined sheet pan and bake for 30 minutes.
While the tomatoes are cooking, put a pot of water on the stove and bring to a boil.
Once you put the pasta in the boiling water and cook to Al Dante.
While the pasta is cooking, place 2 table spoons olive oil, avocado, garlic, salt and lemon juice to a food processor.
Pulse until the ingredients are smooth and creamy.
Drain the pasta when it is done cooking and pour the pasta back into the pot.
Remove the tomatoes from the oven and add to the pasta, then pour in the avocado sauce and mix well to combine all the ingredients and the pasta is covered in the sauce.
Top with parmesan cheese, salt and pepper to taste and enjoy.
