Lemon Roasted Asparagus

  • 1 pound asparagus
  • 1/2 lemon
  • 1 shallot finely chopped
  • 2 tablespoon olive oil
  • salt and pepper to taste


  • Preheat the oven to 375 degrees
  • Zest the lemon. Cut it in half and squeeze the juice of one of the quarters. Set the juice to the side.
  • Combine the lemon, shallot, oil, salt and pepper in a small bowl.
  • Place the asparagus on a sheet pan.
  • Pour the mixture over the asparagus.
  • Roast for 15 minutes.
  • Remove from the oven and drizzle the lemon juice over the top.
