In a separate bowl mix eggs and milk. If you are going to add a little vanilla extract then you will want to add it in here.
Put mixture on one piece of bread and put another piece of bread on top.
Dip bread into egg and Milk mixture, make sure both sides are covered.
Grease the pan or griddle with non stick cooking spray or butter.
Place the stuffed french toast on the griddle and cook for 2 minutes until golden brown. Once the first side is cooked flip and cook the other side. Repeat until all of them are cooked.
