Ingredients

  • 1 1/2 cups flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup melted butter
  • 1/2 cup light brown sugar
  • 1/2 cup sugar
  • 1 large egg
  • 1/4 cup sour cream
  • 2/3 cup half & half
  • 1 teaspoon vanilla bean paste
  • 2 teaspoons lemon zest
  • 1 cup fresh blueberries

Instructions

  • Preheat oven to 350*F.
  • Line pan with cupcake liners.
  • In a large bowl, combine flour, baking powder, baking soda, and salt. Set aside.
  • In a separate bowl, whisk together melted butter, and both sugars.
  • Whisk in egg, sour cream, half & half, vanilla bean paste, and lemon zest.
  • Combine wet and dry ingredients, then fold in blueberries.
  • Bake for about 20 minutes.
  • While cupcakes are baking, make frosting. This cream cheese frosting is perfect for these blueberry cupcakes
