Cheesy Potato Casserole

Cheesy Potato Casserole (Also known as FuneralPotatoes and Party Potatoes) is the perfect holiday side dish! Thischeesy hashbrown casserole is so easy to make and perfect for making make aheadfreezer meals. Cheesy potato casserole is full of melted cheese and frozencubed hashbrown potatoes that is always a winner at our dinner table!

Ingredients

  • 28 ounce bag Cubed Frozen Hashbrown Potatoes
  • 10.5 ounce cream of chicken soup (1 can)
  • 8 ounces sour cream
  • 2 cups sharp cheddar cheese
  • 1 medium onion cut up in to tiny pieces
  • 35 ritz crackers
  • 1/4 cup butter cut into cubes

Instructions

  • Preheat oven to 375.
  • Dice the onion and add to a large mixing bowl.
  • Add the Cubed Frozen Hashbrown Potatoes, cream of chicken soup, sour cream, 1 cup of shredded cheddar cheese to the onion and mix well.
  • Spray a baking dish with nonstick spray.
  • Pour the potato mixture into the baking dish and smooth out until evenly distributed.
  • Place the crackers in a ziplock bag and seal shut, using a spoon smash the crackers into tiny pieces.
  • Randomly place the pieces of butter on top of the potato mixture.
  • Sprinkle remaining shredded cheddar cheese on top.
  • Sprinkle smashed crackers on top of the cheese.
  • Cover the baking dish with foil and bake for 45 minutes, remove the foil and bake for an additional 10 minutes.
