Crock-pot Bacon Cheddar Cauliflower Soup

Crock-pot Bacon Cheddar Cauliflower Soup is AMAZING! Cooked in the crockpot with the amazing flavors of cauliflower, bacon and cheddar cheese! Oh yum!

Ingredients

  • 4 cups cauliflower a large head
  • 1 small onion diced
  • 1 teaspoon salt
  • 1 teaspoon pepper ground black pepper
  • 6 cloves garlic minced
  • 3 cups chicken broth
  • 8 oz cream cheese
  • 1/2 cup cheddar cheese shredded
  • 1/2 pound bacon cooked and chopped
  • 2 strips of scallions sliced

Instructions

  • Cut the cauliflower into florets and place it in your crockpot with your onion, salt, pepper, garlic and chicken stock.
  • Cook on low for 6 hours or high for 4 hours.
  • Once its done add your cream cheese and cheddar cheese. Using an immersion blender puree the soup until it is smooth and creamy. Stir in most of the bacon.
  • Portion out your soup into the bowls and top with some extra cheese, bacon, and scallions

Notes

If you would like to have some chunks in your Bacon Cheddar Cauliflower Soup, when you are done cooking it in the crockpot, remove a scoop of the cooked cauliflower and set it aside. Then just add it back into your soup after you have used the immersion blender to mix it all up.
