Ingredients

  • 12 ounces Corned Beef
  • 1/2 cup Thousand Island dressing
  • 6 slices Swiss cheese
  • 6 slices Rye bread
  • 1 cup Sauerkraut refrigerated or jarred

Instructions

  • Preheat oven to 350.
  • Cook corned beef in crock pot, if you do not have any left overs to use. Slice your corned beef thick when you are cutting it.
  • Using the toaster, toast all of the rye bread to a medium toast. I have a 4 slice toaster that makes my life so much easier.
  • While you are toasting the bread, squeeze the sauerkraut so there is no liquid in it.
  • Once all the bread is toasted, lay 3 pieces flat on a baking sheet.
  • Layer each piece of rye bread with corned beef, sauerkraut and then 2 pieces of Swiss cheese and top each sandwich with another piece of toasted rye bread.
  • Place baking sheet in the oven for about 5 minutes, just until you see the cheese is melted.
  • Remove the baking sheet out of the oven, take the top off of each sandwich and drizzle Thousand Island dressing on top of the melted Swiss cheese. Place the piece of toasted rye bread back on top to form a sandwich.
  • Serve with desired sides.
