Preheat oven to 425F.
Place the carrots in a large cast iron pan (or oven-safe frying pan or baking dish). Arrange the carrots so they are single layer, with very little overlapping as possible.
Drizzle the oil over the top of them, covering all the carrots.
Season with salt and pepper.
Place them in the oven for 20 -25 minutes or until the carrots are fork tender.
While the carrots are roasting, in a medium saucepan, melt the butter.
Add the garlic and stir well. Add the honey, parsley, and a dash of salt. Mix well and set aside until the carrots are cooked.
Remove the carrots from the oven when they are cooked and drizzle the Honey Garlic sauce over top the carrots, ensuring the cover all the carrots.
