Cherry Banana Bread Recipe

  • Preheat the oven to 350°F. Prepare a loaf pan by lining with parchment paper and spraying with pan spray. Set aside.
  • In a medium bowl, combine the mashed bananas, vanilla extract, eggs and melted butter. Add the flour, sugar, baking powder and salt. Mix until well combined and no streaks of flour remain.
  • Fold in the walnuts, chopped cherries and chocolate chunks.
  • Pour the batter in the prepared loaf pan. Slice the remaining whole banana in half horizontally and place both halves seedy side up in the center of the batter.
  • Bake at 350°F for 1 hour. The bread may take as long as 75 minutes to bake. Test it with a toothpick to make sure it is cooked through.
  • Remove the bread from the pan after 10 minutes. Cool completely before slicing.
