This cherry banana bread is the perfect quick bread for springtime. It's easy to make and it's sure to satisfy your sweet tooth.
Preheat the oven to 350°F. Prepare a loaf pan by lining with parchment paper and spraying with pan spray. Set aside.
In a medium bowl, combine the mashed bananas, vanilla extract, eggs and melted butter. Add the flour, sugar, baking powder and salt. Mix until well combined and no streaks of flour remain.
Fold in the walnuts, chopped cherries and chocolate chunks.
Pour the batter in the prepared loaf pan. Slice the remaining whole banana in half horizontally and place both halves seedy side up in the center of the batter.
Bake at 350°F for 1 hour. The bread may take as long as 75 minutes to bake. Test it with a toothpick to make sure it is cooked through.
Remove the bread from the pan after 10 minutes. Cool completely before slicing.
