Baked Brie in Puff Pastry with Blueberry Pie Filling

Ingredients

  • 1 6 inch round of brie
  • 1 sheet puff pastry
  • 4 tablespoons butter melted
  • 1 cup blueberry pie filling
  • Zest from one lemon

Instructions

  • Preheat the oven to 375°F. line a baking sheet with parchment paper and set aside.
  • Lay out the puff pastry sheet flat on a baking sheet or in a pie pan and roll with a rolling pin so it is big enough to wrap the cheese round.
  • Trim the edges and save the extra pieces of puff pastry dough.
  • Melt the butter and using a brush, brush the melted butter inside the puff pastry.
  • Place the brie in the center of the puff pastry dough.
  • Spread the cranberry sauce on top of the brie.
  • Bring the edges of the puff pastry dough up over the top and seal well, using most of the remaining butter.
  • Brush the top well with the rest of the butter.
  • Bake in a preheated 375°F oven for 20-35 minutes.
  • Remove and let sit for at least 20 minutes before serving.
