Preheat the oven and skillet to 350 degrees.
Melt your coconut oil in the microwave for one minute.
In a large bowl mix the oil, eggs, sugars, yogurt, vanilla, cinnamon, nutmeg.
In a medium bowl whisk together the flour, baking powder, baking soda, salt, the chopped apples and carrots. Mix the wet and dry ingredients together until combined.
Remove the skillet from the oven and carefully spray the pan down with some oil.
Pour the batter into the hot pan and spread it out.
Top the batter with the sliced apple.
Bake for 45- 55 minutes, until a toothpick come out clean from the middle.
