Cut the chicken breasts into small cube pieces and add to a mixing bowl.
Wash and cut the onion, bell pepper, and jalapeño peppers and set aside.
Add the smoked paprika, onion powder, garlic powder, salt, and pepper into the mixing bowl with the chicken and stir well to coat the chicken.
Add 1 tablespoon vegetable oil or olive oil to a large, deep skillet and turn the heat to medium-high.
Add the uncooked chicken into the pan and cook for 2 to 3 minutes per side until golden brown. Transfer the chicken to a plate once it is done cooking.
Add 1 tablespoon of vegetable oil or olive oil to the skillet and then add the onion, pepper, and jalapeños. Stirring occasionally, cook until the onions have softened, about 4 to 6 minutes. Transfer the vegetables to the plate with the chicken once they are done cooking.
Add the butter to the skillet and once it is melted add the gnocchi and cook for 5 minutes. Then add the garlic and cook for an additional 30 seconds until fragrant.
Add the chicken and vegetables back into the skillet and cook for an additional minute until everything is warmed through.
Top with the cilantro and enjoy.
