Preheat the oven to 350°F. Add the sweet potatoes into a large bowl. Use a potato masher to mash the sweet potatoes until they are smooth.
Add the lemon juice, butter, white sugar, brown sugar, evaporated milk, eggs, flour, nutmeg, ground cinnamon, ground clovers and ground ginger. Mix well until everything is combined.
Place the pie crust into the pie plate. Crimp edges of the pie crust using your knuckle and finger tips or use a fork to create a pattern around.
