Ingredients

Sweet Potato Casserole Base Ingredients:

  • 4 large sweet potatoes baked and mashed
  • 1 1/2 cup sugar
  • 1/3 cup butter or margarine melted
  • 2 eggs beaten
  • 1 teaspoon vanilla extract

Sweet Potato Casserole Topping Ingredients:

Instructions

  • Cook sweet potatoes with your preferred method of microwave, boil or oven bake.
  • Then heat the oven to 375 once the sweet potatoes are done cooking.
  • Once the sweet potatoes are cooked, allow them to cool a bit. Then peel the skins.
  • Add the sweet potatoes to a large bowl and mash using a potato masher or a fork.
  • Add the sugar, butter, eggs, and vanilla to the mashed sweet potatoes and mix until well combined.
  • In a medium sized bowl, combine the topping ingredients and using a pastry cutter or your fingertips mix until crumbly.
  • Spar a baking dish with nonstick spray. Then pour the sweet potato mixture into the baking dish.
  • Sprinkle the pecan crumble topping all over the sweet potato casserole mixture.
  • Bake for 20 mins or until lightly browned.
