Low Carb Taco soup has all the flavors you love about tacos, in one amazing soup! Cooked in the crockpot, low carb taco soup is a quick and easy dinner!

  • If your ground beef is not cooked, cook it and drain it. 
  • Spray your crockpot with no stick spray and pour in ground beef.
  • Cut block of cream cheeses into chunks and add to the crockpot. Dice your onion and add to crockpot.
  • Add garlic, taco seasoning, Rotel, Green chilis, beef broth and chili powder to crockpot.
  • Stir to mix. Place lid on crockpot and cook on high for 2 hours or low for 4 hours.
  • When done cooking top with cheese and sour cream if desired. 

Notes

If you want to you can add some shredded cheese and sour cream on top when serving for even more amazingness!
