Tacos have always been a staple meal in our house. I always have everything needed to make tacos because it is our go to meal for nights when we have gotten so busy that getting dinner on the table is an after thought.

To make my life easier I always keep bags of frozen precooked ground beef in my freezer. I buy big family packs, cook them all up at one time and then portion it out into 1 pound bags of ground beef and freeze it. It really makes life so much easier then having to cook the ground beef every time I need it. If you have a busy household like ours then this might be the perfect solution to your house as well.
If you do not have precooked ground beef on hand, then you will need to cook your ground beef in a skillet before making this low carb taco soup recipe.

Whenever I make Taco anything I always use homemade Taco Seasoning. You can buy the packets but I have found the flavors are much better when I make my own. I make a big batch of it and store it in a spice jar.
There are many different crockpots out there, but personally I like the Programable Crockpot. I can set the cook time and then when the cook time is done, it automatically switches over to the warm setting to keep the food warm with out continuing to cook it.
How to Make Low Carb Taco Soup
If you want this Low Carb Taco soup to have more spicy kick to it, you can add an additional can of green chilis. I tend to keep things on the low end for spicy in our house because a few of the kiddos are not fans of anything spicy, but it is really easy to add an additional kick to this taco soup recipe.
If you are like me and forget about making dinner because time slips away from you and you have to run a kiddo to an activity, this one is great! You can dumb everything in the crockpot, set it for 2 hours on high and dinner will be done when you get home! If you have actually planned dinner you will want to make this one for 4 hours on low. Also if you are a good planner, please send some of your planning skills my way because most days things are on a whim once dinner time hits and I think I might lose my mind! LOL

Crockpot Low Carb Taco Soup
Ingredients
- 2 pounds ground beef cooked
- 2 tablespoon minced garlic
- 2 tablespoon taco seasoning
- 10 ounces Rotel with diced tomatoes
- 4 ounces diced green chilis (canned)
- 8 ounces cream cheese
- 4 cups beef broth
- 1/2 teaspoon chili powder
- 2/3 cup onion (About a full small onion)
Instructions
- If your ground beef is not cooked, cook it and drain it.
- Spray your crockpot with no stick spray and pour in ground beef.
- Cut block of cream cheeses into chunks and add to the crockpot. Dice your onion and add to crockpot.
- Add garlic, taco seasoning, Rotel, Green chilis, beef broth and chili powder to crockpot.
- Stir to mix. Place lid on crockpot and cook on high for 2 hours or low for 4 hours.
- When done cooking top with cheese and sour cream if desired.

We really enjoyed the taco soup! Very good flavor. I cooked it in the crock pot on low for 5 hrs and the onions did not soften–they were chewy. So my suggestion would be to pre-cook the onions while browning the ground beef if you plan to slow cook the soup on low. I recommend this recipe!

I made this for my daughter and I can’t say enough good about this taco soup!!! I kept tasting it and finally decided I needed to have a bowl. Oh my gosh. It is my new favorite soup! I made it all winter long and put it into freezer bowls so I could have it whenever I got a crave for it. It freezes really well. I’m sure I will make it this summer too. Who says soup is just for the winter months???
Everyone who tries this loves it and they usually ask for the recipe. Plus…it is really healthy. You don’t have to be on the KETO diet to enjoy it. This is a 10 star soup as far as I’m concerned.

Thank you so much for this recipe!! I thought this was fantastic. I just made this, am eating it now! For people with an Instant Pot, I browned the meat first and then cooked everything (except the cream cheese) in the Instant Pot for 25 minutes. After a quick release, I added a chopped red bell pepper and the cream cheese, let it come to pressure with a zero minute cook time, then did another quick release. Perfection, thank you SO much! <3!
