Keto Instapot Broccoli and Cheddar Soup

This Instant Pot Keto Broccoli Cheddar Soup is the perfect meal to make everyone happy! Plus you can’t beat that it is cooked in the instant pot, which makes it a super quick meal to get on the table at dinner time!
When I make this soup for our family dinner, I eat the soup and sometimes a small salad it fills me. I then also make rolls like these garlic cheddar rolls for the rest of my family. They enjoy their carbs and I enjoy my low carb meal. It is a total win win.
Sometimes if I am wanting to change up the flavor of the soup a little bit I cook a few pieces of bacon for us to sprinkle on top of the broccoli cheddar soup after I put it in the bowls to serve.
Are carrots low carb?
Carrots are not a low carb veggie specifically as there are 6 grams of carbs in a medium carrot and 3 grams of sugar, but since carrots also provide 1.5 grams of fiber you are only getting 4.5 net carbs per medium carrot. For me I am OK with having 4.5 net carbs in the WHOLE pot of this broccoli cheddar soup. If that is not ok with you while you are sticking to a Keto and Low Carb diet, then just omit the carrot.
How to make Broccoli Cheddar Soup
Broccoli Cheddar soup
- Wash your broccoli and then cut the broccoli into florets.
- Place the broccoli, carrot, garlic, chicken broth, and cream cheese into the instant pot.
- Place the lid on and with the vent closed pressure cook for 5 minutes at high pressure, immediately followed by a manual pressure release.
- Remove the lid and turn the pot to saute low.
- Stir in the cheddar cheese then let the soup simmer for an additional 5-10 minutes to help melt any lumps of cream cheese.
