Crockpot Cheeseburger Soup
Crockpot Cheeseburger Soup takes all the amazing flavors of a cheeseburger and puts them into a delicious soup!
- 1 pound ground beef
- 1/2 cup green pepper
- 1 small onion
- 8 oz cream cheese
- 10 oz Rotel
- 32 oz beef stock
- 1 teaspoon garlic powder
- salt and pepper
- 1 cup cheddar cheese
- 1/4 cup sour cream
- 2 scallions
Brown the beef in a saute pan over medium heat, once browned remove the beef from the pot and drain it on a plate lined with paper towels.
Add the beef, pepper, onion, Rotel, beef stock, garlic powder, salt, and pepper to the crock pot and stir well. Turn on low for 4 hours.
Once cooked, add in the cream cheese and stir until cream cheese is well combined. Add in the cheddar cheese and stir.
Pour into serving bowls and top with more cheddar cheese, sour cream, and scallions.
