Making life easy with meal prep!
Because I like to meal prep, to make my life easier I tend to have precooked ground beef in my fridge. If you also prep meat like I do then you can skip the step of browning ground beef. Then just use ground beef that you have prepped in your freezer already when you are making this Crockpot Cheeseburger Soup.
I find it easier to defrost the precooked ground beef before putting it into the crockpot. However if you are running behind schedule for the day, you can just toss the frozen precooked ground beef into the crockpot with the rest of the ingredients.
When adding in the cream cheese at the end when making this Crockpot keto Cheeseburger Soup, I find it much easier to cut the cream cheese into chunks and then add it in. Adding a brick of cream cheese in when you are making Crockpot Cheeseburger Soup ends up being more work and a pain to stir in well.

Personally I put cheddar cheese, sour cream, and scallions on top of my soup. But you can also add some crumbled cooked bacon on top and turn it into bacon cheeseburger soup! Let me tell you, that tastes amazing too!

Can you Freeze Crockpot Cheeseburger Soup?
You can freeze this amazing soup, personally, when freezing crockpot cheeseburger soup I use mason jars. I fill them leaving about 2 inches at the top to the soup has room to expand. You can also use freezer Ziploc bags if you want to when freezing it. Just fill the bags and then lay them flat to freeze.
To cook this soup after freezing it, defrost the soup in the fridge the night before. Then pour into a pot and heat on the stove.
You can keep this soup frozen for up to 6 months.

- Green Pepper
- Cream Cheese
- Beef Stock
- Garlic powder

How to Make Crockpot Cheeseburger Soup
Brown the beef in a saute pan over medium heat, once browned remove the beef from the pot and drain it on a plate lined with paper towels.
Add the beef, pepper, onion, cream cheese, Rotel, beef stock, garlic powder, salt, and pepper to the crock pot and stir well. Turn on low for 4 hours.
Once cooked, add in the cream cheese and stir until cream cheese is well combined. Add in the cheddar cheese and stir.
Pour into the soup serving bowls and top with more cheddar cheese, sour cream, and scallions or with any other variety of toppings you prefer.
