This Speck Alto Adige Mozzarella Mac & Cheese is so good! I made it this past week and everyone cleared their plates and asked for seconds! Even better it is super easy to make!
If you have never heard of or tried Speck Alto Adige, it is similar to prosciutto. It can be served diced, in strips or thinly sliced like prosciutto but either way its smokey and deliciously herby flavor are inimitable. Authentic Speck always comes from the Alto Adige region of Italy, hence the complete name Speck Alto Adige. The flavor of the Speck Alto Adige comes out amazingly in this Speck Alto Adige Mozzarella Mac & Cheese. The cheese sauce even though made with mozzarella is creamy like you would expect with any mac and cheese. We served ours with salad and warm fresh bread! Oh so good!
A tip for making this Speck Alto Adige Mozzarella Mac & Cheese, do not over cook your Speck Alto Adige, when cooking it at the end you only need to enough for it to warm up.
Speck Alto Adige Mozzarella Mac & Cheese
Speck Alto Adige Mozzarella Mac & Cheese Ingredients:
- 1 1 pound box pasta
- 3 cloves of garlic
- 1 bag of frozen peas cooked
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups milk
- 8 ounces shredded mozzarella cheese
- 1 and 1/2 cups diced Speck Alto Adige
- 1 teaspoon basil
Speck Alto Adige Mozzarella Mac & Cheese Directions:
Cook your pasta according to the package and drain.
In large pan melt 2 tablespoons of butter and once melted add 2 tablespoons of flour. Mix well to have butter and flour clump together.
Next add 2 cups of milk, slowly to the pan and mix well. Heat until sauce bubbles.
Once bubbling add in 8 ounces of shredded mozzarella cheese and mix well to create a sauce, once it starts bubbling again and all the cheese is melted remove from heat.
Get a second large pan and add a drizzle of olive oil. Then add 3 cloves of garlic, 1 bag of peas, and 1 teaspoon basil cook for 3 minutes then add 1 and 1/2 cups diced Speck Alto Adige to pan and cook for 2-3 minutes until the speck is heated thru.
Now get your pasta and add the peas and speck mixture to it, and mix well. Then pour in cheese sauce and mix well.
Add Salt and Pepper to taste.
