Cucumber Slices With Herb & Garlic Cheese
For this, you will need a soft spreading cheese like Alouette or Boursin. You can easily change up which flavor spreadable cheese that you use when making these tasty cucumber slices. If you are eating keto and low carb then you are going to want to make sure you use the full fat spreadable cheese and not the reduced fat varieties.
When you are at the grocery store you will find the spreadable cheese in the refrigerated section. Grab a few varieties to change things up for the week if you are planning on making these as your lunch. They are great for packing for lunch since you can slice the cucumber and put the cucumber slices in a container and then use another container for your cheese.
When you are making your Cucumber Slices you can just spread the cheese one them, which is what I would do if I was packing them for lunch. However if you are serving these as a cucumber appetizer or as your lunch while you are home, I find it a lot easier to put the cheese into a disposable pastry bag and pipe the cheese on top. Plus they also look so much prettier with the cheese pipped on top then spread, when you put them on a platter.
If you are a person who leaves their produce on the counter then you are going to want to make sure that you chill your cucumber before making these. They taste so much better with a crisp, chilled cucumber!
