Tips for Making this recipe
Room temperature ingredients. Having ingredients at room temperature makes for a smoother and easier to make the cheesecake filling. If you need to bring the cream cheese to room temperature the easiest way this to cut it into chunks and leave it on a plate on the counter for about 20 minutes.
Don’t skip the chill time. This no bake cheesecake with cherry topping needs time to set in the fridge. I like to make it the night before and then it is good to be enjoyed the next day, but no matter when you make it, this recipe needs a full 3 hours to set in the fridge.
Use an electric hand mixer or stand mixer. It is much easier to mix the ingredients when you are using an electric mixer.
Variations of this recipe
Use a different pie crust. I use a graham cracker crust but you can also use a chocolate cookie crust. If you have a favorite homemade graham cracker crust recipe you can use that as well.
Change p the no Bake Cheesecake topping. You can totally change the pie filling topping on this no bake cheesecake. If you are not a fan of cheery, that’s ok you can change it out for lemon pie filling, blueberry pie filling, or leave off the topping.
Add whipped cream. Whipped cream is a great addition added on top. You can use homemade whipped cream or store bought whipped cream, or cool whip. I suggest adding any whipped cream until you have served the cheesecake.

After the cheesecake has been set fully (3 hours in the fridge), leave off the cherry pie filling and wrap tightly in plastic wrap and then place in the freezer. When you are ready to serve, defrost the cheesecake by letting it thaw in the fridge. Top with cherry filling before serving.

- 1/2 cup sugar
- 1 cup boiling water
- 16 ounces Cream Cheese, softened
- 1 teaspoon vanilla extract
- 1 ready-to-use graham cracker crumb crust (9 oz.)
- 21 ounces cherry pie filling
How to make No Bake Cherry Cheesecake
Mix gelatine and sugar in a small bowl. Add boiling water and stir it until gelatine is completely dissolved.
Beat cream cheese and vanilla in a large bowl with an electric mixer on medium speed until smooth and creamy.
Gradually add gelatine mixture by drizzling down the side of the bowl and mix well.
Pour into pie crust.
Refrigerate for at least 3 hours or overnight.
Top with cherry pie filling and serve.
